Between the world’s largest freshwater beach and some of the Ontario’s best ski slopes sits Collingwood. The Great Outdoors
  • Scenic Caves Nature Adventures: Located near the BlueMountain resort, this is a family-friendly destination. Dating back 450 million years, it offers year-round unique adventures.
  • Sunset Point Park: This an iconic Collingwood waterfront location. Like the name suggests a great place to view the setting sun over Nottawasaga Bay.
  • Georgian Trail: Founded in 1989, the trail is a linear park, a ribbon of green that travels from Collingwood, through the village of Thornbury to the Town of Meaford. It follows the route of the original Northern Railway along the southern shore of Georgian Bay. Great for hiking, walking, cycling, cross country skiing and snowshoeing.
  • Millennium Park: In downtown Collingwood, right on the waterfront, the park offers magnificent views of Collingwood Harbour and the ski hill of Blue Mountain.

FALL FLAVOURS:
PUMPKIN FRENCH TOAST

Yields 4 – 6
Prep Time: 15 mins
Cook Time: 45 mins

INGREDIENTS:

FRENCH TOAST
4 large eggs, beaten
3/4 cup milk
1/2 cup pumpkin puree
1 tsp. pure vanilla extract
1/2 tsp. pumpkin pie spice
Kosher salt
1 loaf brioche,
sliced into 1”-thick slices
3 tbsp. unsalted butter,
divided

PUMPKIN BUTTER
4 tbsp. unsalted butter,
slightly softened
2 tbsp. pumpkin puree
2 tbsp. maple syrup
1/4 tsp. pumpkin pie spice
Kosher salt
Powdered sugar, for dusting
Maple syrup, for drizzling

DIRECTIONS:

In a shallow baking dish, whisk eggs, milk, pumpkin puree, vanilla, pumpkin pie spice, and a pinch of salt.Place bread slices into pumpkin mixture and let soakabout 30 seconds per side.

In a large non-stick skillet over medium-low heat,melt 1 tablespoon butter. Cook 2 slices bread at a time until golden, 3 to 4 minutes per side. Repeat tocook all slices.

Make pumpkin butter: In a medium bowl, whip softened butter with pumpkin, maple syrup, pumpkin spice, and a pinch of salt until light and fl uffy.

Top French toast with pumpkin butter, sprinkle with powdered sugar and drizzle with maple syrup.

A Sizzling Summer Weekend at Wyldewood Creek.

Our Summer Sizzler Sales Event was a huge success. It was well attended. Many old and new friends of Brandy Lane dropped in to see and experience our latest project, Wyldewood Creek. The sun, great food by Collingwood’s very own Gustav Chophouse, cold delights by Collingwood Ice Cream and live music made for a wonderful summer afternoon. New friendships were made, and everyone had an opportunity to learn about more about the incredible Wyldewood Creek community.

Yields 1 large tray

INGREDIENTS

2 large Zucchini, sliced longways (1/2 cm thick)
2 Eggplant, peeled salted and (1/2 cm thick)
